Ingredients
  

  • 1 pork rib roast (5–7 pounds, bone-in)
  • 3-4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tsp black pepper
  • 2 tsp dried rosemary
  • 2 tsp thyme
  • Optional: 1–2 tsp paprika for extra color

Instructions
 

  • Preheat your oven to 450°F (230°C).
  • Prepare the roast by rubbing it with olive oil, garlic, salt, pepper, rosemary, thyme, and paprika if using.
  • Place in a roasting pan with a rack to elevate the meat.
  • Roast at high temperature for 20–30 minutes to sear the exterior.
  • Reduce oven temperature to 325°F (160°C) and continue roasting until internal temperature reaches 145°F (63°C) for medium-rare or 160°F (71°C) for medium.

  • Allow the roast to come to room temperature before cooking.
  • Pat the meat dry to ensure a crispy crust.
