Ingredients
  

  • 300 g penne or fusilli pasta
  • 2 tbsp olive oil
  • 250 g chicken breast, diced
  • 150 g chorizo, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 200 ml double cream or creme fraiche
  • 50 g grated Parmesan cheese
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • Optional: fresh parsley for garnish

Instructions
 

  • Cook the pasta: Boil in salted water according to package instructions until al dente, then drain and set aside.
  • Sauté the chicken and chorizo: Heat olive oil in a large pan. Add diced chicken, season with salt and pepper, and cook until golden. Stir in sliced chorizo and cook for 2–3 minutes until slightly crispy.
  • Add aromatics: Toss in onion and garlic, cooking until softened and fragrant. Sprinkle in smoked paprika for a smoky, robust flavour.
  • Prepare the creamy sauce: Lower the heat and pour in cream. Stir in grated Parmesan cheese until melted and combined, creating a smooth chicken and chorizo pasta creamy sauce.
  • Combine with pasta: Add cooked pasta to the pan and toss gently until all pieces are evenly coated.
  • Optional bake: Transfer to a baking dish for a chicken and chorizo pasta bake, top with extra cheese, and grill for 5–10 minutes until golden.
  • Garnish and serve: Sprinkle with fresh parsley and serve hot.
